Manchester's Radisson Blu Edwardian opens its new restaurant next month, with a fusion menu blending Japanese and Mexican small plates.

Peter Street Kitchen will take over the former Opus One site on Peter Street as part of the hotel's multi-million pound makeover.

The small plates served there will champion contemporary and traditional flavours from both nations, in a fusion menu we didn't know we needed.

From Mexico, dishes will include shredded crab and ginger mayo tostadas; Mayan-spiced chicken ensalada; and Mezcal-glazed paprika ribs cooked on a Japanese Robata barbecue.

Japanese plates will include yellowtail sashimi with a spicy yuzu soy; chilli lemon roasted baby chicken served on a traditional bincho grill; and warm Wagyu beef flatbreads with a dried chilli and yuzu mayo.

Desserts will largely draw inspiration from Japan, with a chocolate bento box on the menu.

A stylish new bar and lounge will complete the transformation, with a cocktail menu designed by award-winning bartender Dan Berger, of London's The Ned and The Blind Pig.

If you book a private dinner, you'll be seated around the traditional hibachi, a teppanyaki-style charcoal firepit.

Peter Street Kitchen will also offer regular Rikyu brunches with free-flowing Japanese cocktails and live entertainment.

The restaurant opens on October 13, following on from its London sister restaurants May Fair Kitchen (Spanish and Italian small plates), Leicester Square Kitchen (Peruvian and Mexican) and Monmouth Kitchen (Peruvian and Italian).

The creation of the restaurant has been overseen by ex-Nobu manager Amir Jati, now the service excellence director for Edwardian Hotels London, who also opened the three London restaurants.

Amid said: "This concept has proved enormously popular in London, with Leicester Square Kitchen in the top five of both Peruvian and Mexican restaurants. We know that Peter Street Kitchen will be a similar game-changer within Manchester’s booming restaurant scene."
